Blueberry Cake

Who doesn't love a good blueberry cake? It's soft and moist, with the refreshing taste of juicy blueberries. 


Ingredients: 

  • Unsalted butter (1/2 cup)
  • Buttermilk (1 cup)
  • Cake flour (2 cups)
  • White sugar (1/2 cup) 
  • Brown sugar (1/4 cup)
  • 2 eggs (or 3 small eggs)
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1/4 teaspoon cinnamon
  • 2 cups fresh blueberries (or 1 tin of canned blueberries) 

  • Recipe:

    1. Preheat your oven to 204 °C
    2. Cream the sugar and butter until smooth
    3. Mix in the buttermilk and eggs until combined
    4. Combine all your dry ingredients in a separate bowl
    5. Add the wet ingredients to the dry ingredients and carefully fold it in
    6. Add in your blueberries and mix until they are incorporated
    7. Bake for about 19 - 20 mins 
    8. Enjoy

  • TwinnieFoods Tips:
    • Coat the fresh blueberries with just a little bit of flour to ensure that the berries don't sink to the bottom of the cake. 
    • This recipe makes an 8" round cake.
    • If you are using a deeper cake tin, bake the cake for a longer time. 
    • Use 3/4 cup of white sugar if you like the cake to be sweet.
